Mining and skinning seem to get good money...or, mining and herbalism. Shoot, I make over 500G per day just doing dailies and collectng meat, leather, and drop items. I have been making alot more money now, since I have raised my cooking skill over 400 and can make some great raid/instance food. These foods will allow you to gain stamina, haste, attack power, mana, etc...along with raising stamina. So...get 2 gathering professions. Level cooking, first aid, and fishing for added money, and visit AH to sell all unwanted items you come across. Get two gathering professions.
